How to cook artichokes in a pan, a recipe that involves two stages of cooking, the first on the fire in a pan, the second in the oven with the grill on for the final gratin, with breadcrumbs and grated pecorino cheese.


Ingredients for 4 portions

- 1 generous spoonful of breadcrumbs

- 2 tablespoons of grated pecorino cheese


- extra virgin olive oil

- 4 artichokes

- 2 lemons


- 1 bunch of chopped fresh aromatic herbs

- half a glass of dry white wine

- salt and pepper


Preparation of artichokes in a pan to gratin

Clean the artichokes by depriving them of the hardest external leaves and thorns, then cut them in half and remove the beards and thorny leaves.

Pass them in a bowl with water acidulated with the juice of 1 lemon.

In another bowl, mix the chopped herbs with the breadcrumbs, the grated pecorino cheese, salt, pepper and oil just enough to bind the mixture, mixing thoroughly with a wooden spoon.

Grease the bottom of a pan with oil large enough to hold the artichokes distributed on the bottom and resting on the back.

Spread the prepared breadcrumbs mixture over the artichokes, then add the wine and the juice of half a lemon, finally put on the fire and cook for about 20 minutes on medium heat, with a container covered by a lid.
