Pan-fried aubergines with yogurt and cream

How to cook eggplant cooked in a pan, recipe with yogurt and cream sauce, ideal as a condiment to be poured before serving on the table cold.


Ingredients for 4 portions

- 100 gr. of natural yoghurt

- 250 gr. of cream


- 1 clove of garlic

- 450 gr. of aubergines

- 40 gr. of butter


- salt

- pepper

How to make eggplants cooked in a pan

After peeling the aubergines, cut them into slices to divide into cubes of about 1.5 cm each side.


Once this is done, leave them to rest for 30 minutes, then wash them in cold water and dry them with a clean cloth.

Melt a knob of butter in a pan and add the eggplants, cook over medium heat for 8 minutes in a covered container, turning them occasionally to soften them.

Once cooked, put the aubergines to cool in a bowl, then take a bowl to mix the yogurt with the cream, a pinch of salt and pepper, a peeled and washed clove of garlic.

Season the aubergines with the sauce and serve.
