How to prepare pan-fried duck breasts

Grease the bottom of an oven dish evenly with olive oil, then arrange a layer of new potatoes to sprinkle with chopped sage and 2 tablespoons of oil, then salt, pepper and cook in the preheated oven at 180 ° C for about thirty minutes.

In the meantime, heat 2 tablespoons of oil and butter in a pan, add the chopped bay leaf, the sprig of thyme and the floured duck breasts.
