Preparation of hake fillets in a pan
Flatten the hake fillets with the meat mallet, using great care to prevent them from breaking, after flouring and salting them before putting them in a medium-sized pan, already prepared with melted and hot butter, where they are cooked for about 8 minutes until golden brown .
In a small bowl, put the egg yolks, the lemon and orange juice, the juices prepared, the cream and a little salt, then beat everything with a fork to mix well.
