How to make potato rosti, recipe with rosemary to cook in a pan with butter and a little oil, a few necessary ingredients and a simple preparation process that requires little time.
Ingredients for 4 people
- butter
- extra virgin olive oil
- 800 g of potatoes
- 5-6 rosemary sprouts
- salt
Preparation of rosemary-fried potato rosti
Peel the potatoes and grate them with a large hole grater, collecting them directly in a bowl.
Add a pinch of salt, the finely chopped rosemary and mix.
Divide the mixture into 8 piles and lightly dry the potatoes, dabbing them with kitchen paper.
Start preparing the first rosti by taking a pan about 15 cm wide, melting a knob of butter with a little oil.
Put a portion of potatoes in the central part of the pan, crushing it with a spatula, in order to obtain a flat rosti.

Brown each part for 2-3 minutes, then drain and pass it on a serving dish, to be kept hot in the oven at 70 ° C.
Prepare, following the same procedure, 7 more rosti, using the potato mixture and greasing the pan with butter and oil.
