Pan speziale bolognese with almonds and pine nuts

How to make Pan speziale or Carthusian, an ancient Bolognese recipe with almonds and pine nuts among the ingredients, whose dough remains unchanged for a few months if well preserved in aluminum foil.


Ingredients for 6 people

- 200 g of flour

- 1 liter and a half of boiling water


- 125 g of honey

- half a large spoonful of baking soda

- 100 g of granulated sugar


- 80 g of Corinth grapes softened in warm water

- 80 g of pine nuts

- 80 g of peeled almonds


- 50 g of candied citron in small pieces

- 50 g of candied orange peel in rather large pieces

- 80 g of chocolate flake cover

- 1 teaspoon of anise seeds

- 1 pinch of ground cinnamon

- a pinch of salt

How to prepare Pan speziale or Carthusian of Bologna

In a bowl put the honey, sugar, baking soda and a teaspoon of anise seeds, then pour the boiling water over it, continuing to stir.

Add the flour by slowly pouring it down and mix the ingredients mixing vigorously with a wooden spoon.

Squeeze the Corinth grapes and add them to the mixture with almonds, pine nuts, cedar, chocolate, a pinch of cinnamon powder and a pinch of salt.


Line the baking tin with parchment paper and pour the mixture into it, level the surface and distribute the candied orange over it.

Transfer the cake tin to a preheated oven and cook the cake for about forty minutes or until it becomes dry and a beautiful dark golden color.

After removing it from the oven, let it cool and turn it out onto a tray.
