Pasta and beans with pork rind

How to cook pasta and beans with pork rind in the classic version of the recipe, which also includes bacon among the ingredients, to be served lukewarm.


Ingredients for 6 portions

- 1 bone of ham

- 150 gr. of smoked bacon


- 500 gr. of pasta

- 1 sprig of sage

- 300 gr. of borlotti beans


- 600 gr. of pork ribs

- 200 gr. pork rind

- 1 garlic


- Olive oil

- 4 tablespoons of flour

Preparation of pasta and beans with pork rind

Put 6 liters of cold water in a suitable pot, dip the beans, the ham bone, a sprig of sage and salt.

Cook for an hour and add the ribs and the pork rind.

Brown the diced bacon in a separate pan with a little oil and garlic, then add 4 tablespoons of flour, leaving everything toasted for about 10 minutes.

Add everything to the pot with the beans and continue cooking for about 60 minutes, at the end add the pasta to cook slowly for about 30 minutes.

To be served not too hot to appreciate its flavor, even on the next two days if it is left over.
