Pasta with anchovy sauce and saffron breadcrumbs

How to prepare pasta with fresh anchovies, instructions for preparing the sauce with which the garganelli or other type of fresh pasta will be seasoned.


Ingredients for 4 portions

- 3 tablespoons of extra virgin olive oil

- thyme


- basil

- 1 sachet of saffron

- 50 gr homemade bread


- 350 gr fresh garganelli

- 400 gr fresh anchovies

- 1 clove of garlic


- 1 leek

- salt and pepper

How to cook pasta with anchovy sauce

Peel the garlic and mash it, then clean the leek and cut it into slices.

Heat the oil in a pan, add the garlic and leek, a teaspoon of thyme and 1 chopped basil, saffron. Mix well and leave to brown for 4 minutes, stirring occasionally using a wooden spoon.

Add the cleaned anchovies, stripped of the central bone, washed and dried, then salt, pepper and cook for about 10 minutes.

Put the bread in the mixer and operate the small appliance until you have a grain to add to the fish sauce, mix and remove from the heat.

In the meantime, boil the garganelli in salted water to the boil for as long as necessary, then drain and season with the prepared sauce, accompanying, according to taste, with the grated pecorino.
