Ingredients for 4 people

- 300 gr. spaghetti or bavette

- 5 ripe tomatoes


- 1 avocado

- 1 bunch of parsley

- 1 bunch of basil


- juice of half a lemon

- 50 gr black olives

- extra virgin olive oil


- vinegar

- salt

Preparation of the pasta with avocado and tomatoes

Prepare the pitted and sliced ​​olives, wash parsley and basil, chop them both and then wash and cut the tomatoes into pieces.

In a bowl put a pinch of salt, a spoonful of vinegar and pepper, mix until the salt is completely dissolved.

Add the oil and beat with a fork to make the sauce emulsify.

Take a second bowl to put the pieces of tomato, the olives, and the chopped basil and parsley, add the previously prepared sauce and mix.

Peel the avocado and cut the pulp into strips to be moistened with lemon juice.

Boil salted water in a pan where the pasta is cooked, drain and season with the tomato mixture and the avocado strips.
