Penne with green asparagus

How to cook penne with green asparagus, recipe including peeled tomatoes, basil and parmesan among the necessary ingredients, to be prepared in about forty minutes.


Ingredients for 4 people

- 400 g of pens

- 500 g of green asparagus


- 400 g of canned peeled tomatoes

- 1 bunch of spring onions

- 2 tablespoons of olive oil


- half a bunch of basil

- 4 tablespoons of grated Parmesan

- 1 tablespoon of butter


- salt

- pepper

Preparation

1) After cleaning the onions, wash them and cut them into slices.

2) Brown the onions in a little oil heated in a pan, then add the tomatoes and cook over medium heat for about 7 minutes, waiting for the sauce to thicken, then adjust the salt and pepper.

3) Wash the asparagus and remove the lower part, then cut them into small pieces about 4 cm long and cook them in boiling salted water, making sure they remain al dente, finally drain them leaving them to drip.

4) In the asparagus cooking water, cook the pasta al dente.

5) Wash the basil and dry it, before cutting it into strips.

6) After adding the butter to the sauce, mix the asparagus and the basil, leaving to cook for about 3 more minutes.


7) Season the spaghetti with the asparagus sauce, sprinkle with Parmesan before serving.
