Pineapple with vanilla ice cream and cherries

How to make pineapple stuffed with vanilla ice cream mixed with cooked cherries, their syrup and diced pineapple flavored with Kirsch, to be brushed with apricot jelly before serving.


Ingredients for 4 people

- 1 ripe pineapple

- 150 g of cherries - without stem and stone e
simmer for a few minutes in sugar syrup -


- 600 g of vanilla ice cream

- 5 tablespoons of Kirsch

- 1.5 dl of apricot jelly


- 1 dl scarce of whipped cream

- 2 spoons of sugar

How to prepare pineapple with vanilla ice cream

Cut the top cover of the pineapple.


With a sharp knife, cut along the internal perimeter of the pineapple, leaving a distance of about one centimeter from the peel, reaching deep.

Turn the fruit over and repeat the same operation from the opposite side, then extract the entire block of the pulp.

Keeping it straight, cut the pulp in half horizontally, then remove the central core.

Slice one half of the pulp into thin slices, arrange them on a plate and sprinkle them with sugar and two and a half tablespoons of Kirsch.

Dice the other half of the pulp, then place them in a bowl and wet them with the remaining liqueur.

Put the empty pineapple wrapper vertically on a round tray, closing it on the bottom with the previously cut part.

Fill the emptied inside of the pineapple with vanilla ice cream, mixed with the cooked cherries and their syrup, together with the diced pineapple flavored with Kirsch.

Decorate the surface of the fruit with whipped cream, using a pastry syringe, then surround it with the pineapple slices sprinkled previously with sugar and Kirsch.

After brush them with a little apricot jelly and serve immediately.
