Ingredients for 4 people
- 350 g of fresh robiola
- 150 ml of fresh cream
- 40 g of pistachios
- 2 spoons of milk
- 1 sheet of jelly
- 40 g of icing sugar
- 20 g of raisins
- 100 g of acacia honey
- 1 teaspoon of mixed spices in powder, like cinnamon, cloves, cumin and pepper

Immerse the gelatin sheet in cold water.
In a bowl mix the robiola until soft.
Blanch the pistachios for one minute in boiling water, drain them, remove the skin and let them lightly toast in the oven or pan to dry them, then chop them coarsely.
Add the chopped pistachios to the robiola cream.
Drain the jelly and melt it with two tablespoons of milk on the fire, then let it cool and add it to the robiola.
Whip the cream until stiff, add the icing sugar, and mix it with the cream cheese, mixing gently from bottom to top.
Cover the container and put it in the refrigerator.
Heat the honey with the spices, 1 tablespoon of water and the squeezed raisins.
Take the pistachio cheese mixture from the refrigerator and with the help of two spoons make some balls, then sprinkle them with the spiced honey and raisin sauce.
Serve on the table.
