Recipe of the prisoner from Pistoia, from the Tuscan tradition a typical dish of the province of Pistoia, soup made from homemade stale bread and veal entrails.
Ingredients for 4 people
- Stale homemade bread 250 gr
- Veal entrails 250 g
- A little paw, tail, head
- An onion
- A carrot
- A stalk of celery
- 2 or 3 cherry tomatoes
- Grated Pecorino or Parmesan
- Olive oil
- Salt and pepper

How to prepare the Pistoia prisoner
Prepare a normal broth with the meats, the smells and about a liter and a half of water.
Cook it for a long time and filter it.
Put the hot broth in a crock pot and add the sliced bread.
Salt, pepper and cook slowly, stirring constantly, in order to obtain a homogeneous jelly.
At the end season with excellent extra virgin olive oil and sprinkle with plenty of cheese and other pepper.
