How to make pizzas with Treviso red radicchio and taleggio, to be flavored with chives, a simple recipe for an excellent snack and a valid appetizer
Ingredients for 4 people
For pasta
- 300 g of flour
- 130 ml of water
- 15 g of brewer's yeast
- 2 tablespoons of extra virgin olive oil
- salt
For the dressing:
- 3 tablespoons of extra virgin olive oil
- 200 g of red Treviso radicchio
- 100 g of taleggio

How to prepare pizzas with red radicchio and taleggio
Pour the lukewarm water into a bowl and melt the yeast, add the oil and turn over with a fork, then add the flour and finally the salt, knead vigorously until a smooth and homogeneous paste is obtained.
With the dough obtained form a ball and cover it with a napkin, then let it rise for about an hour in a warm place.
Meanwhile, browse the red radicchio, wash it, dry it and cut it into very fine strips.
In a pan heat the oil and add the strips of red radicchio, salt and pepper lightly, then sauté for 2 minutes, so that the radicchio remains al dente and tasty.
Roll out the pizza dough with a rolling pin and invert a cup of about 8-10 cm in diameter, cut out discs.
Put on each disc of pasta a spoonful of seasoning with radicchio and some strips of taleggio.
Place the pizzas on a baking tray lined with parchment paper and bake them at 180 ° C for 20 minutes.
When cooked, sprinkle the pizzas with finely chopped chives and serve immediately.
