How to cook pork ribs, a recipe that requires you to soak the lentils the night before, as regards cooking, this must be done in a pan with dried onion, tomato sauce and aromatic herbs.
Ingredients for 4 people
- 400 g pork meat cut from the rib
- 250 g of lentils
- 1 aromatic bunch including rosemary, parsley, celery, marjoram and bay leaf
- 1 onion
- 1 clove of garlic
- 1 tablespoon tomato sauce
- 1 bay leaf
- some leaves of savory
- 2 tablespoons of oil
- 2 tbsp butter

Preparation of pork rib with lentils
Soak the lentils from the first evening in warm water, then drain them the next morning and immerse them in freshly salted water together with the aromatic bunch.
Cook for about an hour, making sure they remain al dente.
In the meantime, cut the rib into medium-sized pieces and brown it lightly in the oil and butter, then remove it and set it aside.
In the same pan, brown the onion cut into thin wedges, as soon as it is ready, add the lentils already cooked al dente and the meat, leaving to flavor for a few minutes on medium heat, stirring occasionally.
Add a generous spoonful of tomato sauce, savory, bay leaf, garlic and salt, stirring carefully, then cover and cook until the meat and lentils are cooked in the right place.
