Pumpkin spaghetti with red pepper

How to cook pumpkin spaghetti, recipe with red pepper and whipping cream to be among the main ingredients, to be prepared in about 35 minutes.


Ingredients for 4 people

- 400 g of spaghetti

- 400 g pumpkin pulp


- 1 red pepper

- 20 g sesame seeds

- 40 g of butter


- 2 tablespoons of curry powder

- 50 ml vegetable broth

- 200 ml of whipping cream


- 1 tablespoon lemon juice

- 1 pinch of sugar

Preparation

1) After washing the pumpkin, clean it and remove the peel, then reduce the pulp into strips using a grater.

2) Cut the pepper into four parts, remove the seeds, wash and chop it.

3) In a pan, toast the sesame seeds without seasonings and set them aside.


4) Melt the butter in a pan and brown the fillets of pepper together with the curry for a few minutes.

5) Pour broth and cream, simmer and add the grated pumpkin, cooking for 3 minutes without a lid.

6) Give flavor with lemon juice, salt, pepper and a pinch of sugar.

7) In salted boiling water, cook the spaghetti al dente, then drain and mix them in a container, previously heated, together with the prepared sauce.

8) Finally wash the parsley, dry it and mince it, incorporating it together with the sesame.
