Ingredients for 4 portions
- 10 nuts
- grappa to taste
- olive oil to taste
- 200 gr. of variegated radicchio
- 200 gr. of mascarpone
- salt and pepper
Preparation of the radicchio mousse
Wash and break the radicchio, put it in a pan with a little oil and cook it.
Add the salt and drain well before passing it through the vegetable mill and obtain a puree.
Finely chop the walnuts.
In a bowl put the mascarpone, the radicchio puree, the chopped walnuts, a little grappa, and mix all the ingredients well, then salt and pepper.
