How to make rice and peas with vialone rice, frozen peas, butter, bacon or raw ham, parsley, broth, spring onion, grated Parmesan cheese, salt and pepper.
Ingredients for 4 people
- 180 g of vialone rice
- 1 kg of frozen peas
- 50 g of butter
- 40 g of chopped bacon (or raw ham)
- 1 liter of broth (also of nut)
- 1 tablespoon of chopped parsley
- 1 fresh sliced spring onion
- 2 tablespoons of grated Parmesan
- salt and pepper

Thaw, wash and drain the peas.

In a saucepan put 30 g of butter, the chopped bacon, the chopped parsley and the finely sliced fresh onions, then brown everything slightly for a few minutes and add the peas, let them flavor and bring them halfway through cooking by pouring a little broth at a time.
Add the remaining broth, bring to a boil and pour in the rice.
Let it cook al dente, stirring it if necessary.
A few minutes before serving the soup, check the salt, add a pinch of pepper, the remaining butter and the Parmesan.
Stir again and serve the soup hot.
