Ingredients for 8 people

- 4 eggs

- 400 gr. of Roman ricotta


- the peel of 1 grated lemon

- 60 gr. of sugar

- 20 gr. about breadcrumbs


- 1 tablespoon of rum

- 30 gr. of sultanas

How to make a cottage cheese pudding

Soften the raisins with the rum and pass the ricotta through a sieve. After about 10 minutes drain and squeeze the raisins.


Then in a bowl mix the egg yolks with the sugar and the grated lemon peel, add the ricotta and the softened and squeezed raisins.

After mixing the ingredients, gently add the beaten egg whites.
