Salmon tagliatelle with lemon sauce

How to cook salmon noodles with lemon sauce, recipe for a very delicate fresh and fragrant dish, to be served especially on special dinners.


Ingredients for 4 people

- 400 g of noodles

- 300 g salmon fillets


- 1 bunch of dill

- 4 egg yolks

- grated rind of an untreated lemon


- 1 tablespoon lemon juice

- salt

- pepper


- 4 spoons of white wine

- 1 teaspoon of sugar

- 120 g of butter

Time of realization

About 30 minutes

Preparation

1) First, cook the tagliatelle in abundant salted water, calculating the cooking time indicated on the package starting from the resumption of the boil.

2) In the meantime, cut the salmon into strips, obtaining smaller pieces.

3) After washing the dill, dry it by shaking it, then finely chop it.

4) With a whisk, mix the egg yolks in a pot together with the zest and lemon juice, wine, sugar, salt and pepper, whipping everything until a rather thick cream is obtained, heating over medium heat .

5) Gradually incorporate the cold butter cut into flakes in the sauce, then add the dill and give flavor, if deemed necessary.


6) After draining the noodles, pour them into the pan still dripping, then mix them with the salmon and sauté them carefully for 3 minutes.

7) Finally serve the tagliatelle with the sauce.
