Ingredients for 4 portions
- a few mint leaves
- olive oil
- 1 Kg. Of zucchini
- 250 gr. peeled tomatoes
- 2 cloves of garlic
- salt and pepper
How to make sautéed courgettes
Wash and slice the courgettes, put them in a pan with a little olive oil, garlic cloves, mint leaves, crushed peeled tomatoes, salt and pepper.
Cook in a covered pan and slow heat for about 20 minutes, stirring gently especially in the first phase of cooking to avoid sticking to the bottom of the pan.
Do not exceed the indicated cooking time, to be served hot or cold depending on your preference.
