Savoyarde omelette with lard and potatoes

Ingredients for 4 people

- 6 eggs

- 2 medium sized potatoes


- 1 onion finely sliced

- 100 g of emmental cut into small pieces

- 70 g of lean lard diced and blanched for a few minutes in water


- 50 g of butter

- 1 teaspoon of chopped aromatic herbs

- parsley, sage etc.

How to prepare the Savoyard omelette

Peel the potatoes, cut them into cubes and sauté them in a pan with 40 g of butter.

In the meantime, brown the lard with 10 grams of butter in a pan for a few minutes.

When the potatoes are cooked, add the onion and lard, then sauté for a few more minutes.

In a bowl beat the eggs, add the salt, the chopped herbs, the cheese and pour everything over the potatoes.

Make the mixture spread on the bottom of the pan and cook over moderate heat.

When the omelette is cooked on one side, turn it over and cook on the other.

As soon as ready, place it on the tray and serve.
