How to make almond sbrisolona Mantuan cake, a traditional recipe of Lombard pastry, excellent even a few days later, if stored in aluminum foil.
Ingredients for 6 people
- 200 g of peeled almonds
- 250 g of white flour
- 150 g of yellow flour, finely ground
- 200 g of granulated sugar
- 1 sachet of vanilla
- the grated zest of 1 lemon
- 2 egg yolks
- 200 g of butter at room temperature
How to prepare the Sbrisolona Mantuan cake
Line the cake pan with parchment paper and pass the almonds in the chopper.
Sift the two flours together with the vanilla and arrange them in a fountain making a recess in the center, add the sugar, keeping aside two spoonfuls, the almonds, the lemon zest, the egg yolks and the softened butter at room temperature.

Quickly work all the ingredients obtaining a crumbled dough.
Putting the crumbled dough into the pan, that's okay because the various grains will weld during cooking.
