How to make Scottish butter biscuits, a traditional egg-free recipe typical of Scotland, where you can prepare them for breakfast in the morning and serve them while still hot.
Ingredients for 30 baps
- 400 g of white flour
- 60 g of melted butter
- 1/4 liter of milk
- 20 g of brewer's yeast
- 50 g of sugar
- a pinch of salt
How to make Scottish baps
Sift the flour with the sugar and a pinch of salt.
Dissolve the brewer's yeast with four tablespoons of warm milk.
Knead by gradually pouring the yeast into the flour arranged in a fountain, then add the melted butter, then mix all the ingredients well.
With the dough form a ball and leave it in a container to rise for an hour, covered with a napkin and in a warm place.

After placing the dough on a floured work surface, knead the dough again slightly and divide it into small pieces giving it the oval shape of about 7/8 cm in length and 5 cm in width.
Lightly sprinkle them with flour, line the oven plate with paper and distribute the well-spaced baps between them, since during cooking they will tend to increase in volume.
Leave to rise for another 20 minutes in a warm environment.
Before transferring them to the oven, press them lightly in the center with a finger and cook them in the oven, already hot, for 15-20 minutes, or until they have taken color.
