How to make a shrimp and cannellini bean salad, a recipe that includes a dressing based on white vinegar flavored with tarragon and extra virgin olive oil.


Ingredients for 4 people

- 200 g of dried cannellini beans

- 12 large shrimp tails


- 100 ml of white vinegar

- 3 tablespoons of extra virgin olive oil

- 1 bay leaf


- 1 bunch of tarragon

- 1 pinch of sugar

- salt and pepper


How to prepare shrimp and cannellini bean salad

Soak the cannellini beans in cold water and keep them for 12 hours.

After drain and boil them in a pan with salted water and a bay leaf for about 40 minutes.

In a saucepan, boil the vinegar with a pinch of sugar and reduce it to half its volume.

Then remove the pan from the heat and add the chopped tarragon.

Drain the beans and season them still warm with olive oil, tarragon flavored vinegar, salt and pepper.

Shell the prawns leaving the shell of the final tail and removing the black thread.

In a saucepan, boil the prawns in boiling salted water for 3 minutes and then drain.

Arrange the cannellini beans in a tray, arrange the shrimp tails on top and sprinkle everything with a little chopped tarragon.

Serve lukewarm.
