Once this is done, lower the gas to reduce the flame and pour in the white wine, then wash and dry the orange, then grate about half of its rind directly in the pan, stirring to distribute the fragments evenly distributed.

Divide the orange in half and squeeze one of the two parts in a pan, salting and continuing cooking for about ten minutes, turning the slices of meat at least twice and raising the heat to reduce the amount of sauce.

In the meantime, divide the second half orange in half first lengthwise and then widthwise to obtain thin slices.
