How to make small quiche Lorraine of small puff pastry, made with ham or smoked bacon, with milk, cream and egg, to be baked in the oven.
Ingredients 4 people
- n. 20 forms of puff pastry for quiches
- gr. 50 of grated Gruyère cheese
- gr. 100 of ham or smoked bacon
- cl. 2 of olive oil
For the cover cream
- 1/8 liter of milk
- 1/8 liter of cream
- 1 whole egg
- 1 yolk
- salt and pepper

How small puff pastry quiche Lorraine are made
Prepare the cover cream by carefully mixing the milk, cream, whole egg and yolk, salt, pepper and nutmeg in a bowl.
Once this is done, cut the ham into strips and then sauté it in the pan with the oil, then drain and arrange it over the puff pastry molds.
Add the grated Gruyere cheese on top of each mold together with the previously prepared covering cream.
Put in the oven, previously heated to 200 °, and cook for about 20 minutes.
To be served lukewarm or cold arranged on a tray.
