Spaghetti with peppers and tomatoes

How to cook excellent spaghetti with peppers and tomatoes, recipe including gorgonzola and parmesan, as well as yellow peppers, among the necessary ingredients.


Ingredients for 4 people

- 400 g of spaghetti

- salt


- 500 g of tomatoes

- 3 yellow peppers

- 150 g of gorgonzola


- 80 g of grated Parmesan

- 2 tablespoons of olive oil

- 4 finely chopped garlic cloves


- 1 pinch of oregano

- 1 pinch of chilli powder

About 30 minutes

Preparation

1) After cutting the tomatoes crosswise, remove the core, blanch them, peel them and remove the seeds, then cut the pulp into small pieces.

2) Cut the peppers into strips.

3) After heating the olive oil in a large diameter pan, quickly brown the garlic.

4) Once this is done add the prepared strips of pepper and cook for 5 minutes, taking care to continue mixing, then add salt.

5) Following the cooking times indicated on the package, cook the spaghetti in salted water, making sure they remain al dente.


6) Add the tomatoes to the peppers and flavor with chili pepper and oregano.

7) Cook the sauce obtained for about 10 minutes, stirring occasionally to prevent it from sticking, taste to adjust the salt.

8) Peel the spring onion, wash it and cut it into slices.

9) At this point mix the freshly drained spaghetti with gorgonzola cut into small pieces.

10) Add the tomato and pepper sauce, then mix well and add the spring onion.

11) Sprinkle with Parmesan before serving.
