Ingredients for 4 people

For pasta

- 300 gr. made with flour


- 150 gr. spinach

- 2 eggs

- salt


For the dressing

- 400 gr. of pumpkin

- 1 onion


- 60 gr. of butter

- 2 cloves of garlic

How to prepare spinach noodles with pumpkin

To prepare the pasta first wash the spinach, and without draining them too much, cook them in a saucepan for about 6-7 minutes, then drain, squeeze and finely chop them.

Meanwhile, prepare the flour with a pinch of salt, add the chopped eggs and spinach, mix all the ingredients well and wrap the dough in plastic wrap.

Leave to rest for at least 30 minutes in a cool, dry place.

To prepare the dressing, clean the pumpkin by removing the outer peel, seeds and filaments, then after washing and drying it, cut it into cubes.

After finely chop the onion and put it in a pan with the butter and the cloves of garlic, let it dry and add the diced pumpkin, browning them briefly and mixing them with a wooden spoon; then salt, grind the pepper and add it, finally add the washed and chopped parsley.

Continue cooking the pumpkin for about 10-15 minutes with the pan covered and moderate heat, if necessary add a few tablespoons of hot water during cooking.

Spreading pasta and cooking noodles

Roll out the pasta and make some tagliatelle to cook in abundant salted water, drain and pour over the diced pumpkin, add the grated cheese, mix and serve hot.
