How to cook squid in zimino, recipe with slow cooking in the pan for about two hours, including tomatoes, onion, celery minced among the ingredients, as well as spinach to be added almost at the end of cooking, in order to fully preserve its flavor .


Ingredients for 4 people

- 500 g of squid

- 1 chopped onion


- 1 chopped celery rib

- 1/2 glass of dry white wine

- 250 g of chopped peeled tomatoes


- 1 kg of spinach

- 1 clove of garlic

- 2 tablespoons of chopped parsley


- a pinch of chilli powder

- 1/4 liter of extra virgin olive oil

How to prepare zimino squid

Clean the squid, remove the eyes, mouth and ink bag, wash them under running water, then cut the tentacles into small pieces and the rest into strips.

Clean, wash the spinach and boil them in a pan with only the water left on the leaves and a pinch of salt.

As soon as the spinach is cooked, pass it under cold water, then squeeze and chop it.

In a saucepan with half the oil, brown the chopped onion and celery, then add the squid, salt lightly and as soon as they are colored pour the wine.

When the wine has partially evaporated, add the chopped tomatoes.

Stir, cover and cook the fish very slowly, it will take about two hours.


In a pan with the remaining oil, brown the chilli pepper and the garlic clove, which will be removed as soon as it is golden brown, then add the spinach and leave to brown for five minutes, then add them to the squid.

Season with salt and cook for another fifteen minutes.

Sprinkle the preparation, just before serving, with chopped parsley.
