Stuffed anchovies breaded and fried

How to make breaded and fried stuffed anchovies, recipe with grated pecorino cheese, desalted anchovies, breadcrumbs, 1 egg yolk, chopped garlic and a pinch of oregano, to be done in a pan.


Ingredients for 8 people

- 1 kg of fresh anchovies already deliscated and cleaned

- 1 egg


- 4 tablespoons of breadcrumbs

- Seed oil for frying

- salt


For the stuffing

- 5 tablespoons of pecorino cheese

- 4 tablespoons of breadcrumbs


- 4 salted anchovies

- 1 clove of garlic

How to prepare breaded and fried stuffed anchovies

To make the filling, chop the garlic clove and wash the salted anchovies well.

Put 4 tablespoons of breadcrumbs, egg yolk, chopped garlic clove, a pinch of oregano, desalted anchovies and grated pecorino cheese in a bowl, mix well and add, if necessary, a little milk.

Open the anchovies in 2 parts and stuff them with the mixture, then close them by putting another anchovy cut into 2 parts on top.

Pass the anchovies stuffed with the beaten and lightly salted egg, then wrap them in the breadcrumbs.

Fry them in a pan with very hot seed oil, then drain the anchovies on absorbent paper and serve immediately.
