Ingredients for 8 people

- 8 boiled eggs

- 8 teaspoons of mayonnaise


- 2 teaspoons of chopped parsley

- 2 teaspoons of anchovy paste

- 1 anchovy in oil


- capers to taste

- salt

How to make and decorate stuffed eggs

Remove the shell from the shelled hard-boiled eggs and gently extract the yolks, then mix 5/6 teaspoons of mayonnaise, yolks, anchovy paste, capers, chopped parsley, a little salt if necessary in a bowl.

With this mixture, fill the eggs again and decorate them with the remaining mayonnaise, small pieces of anchovy and parsley leaves.
