Stuffed guinea fowl in a pan


How to make stuffed guinea fowl in a pan, recipe with pork net wrapping or, alternatively, lard or bacon cut into thin slices, a few necessary ingredients.

Ingredients for 4 people

- 1 guinea fowl of about 1 kg

- 1 sprig of rosemary

- 1 sprig of sage

- 40 g of butter

- 20 g of minced raw ham

- salt and pepper

How to prepare stuffed guinea fowl in a pan

Clean the guinea fowl well, wash and dry it inside and outside.

Put the rosemary, sage, salt, pepper, chopped raw ham and 10 grams of butter inside the guinea fowl, then wrap it in the pork net or with lard or bacon cut into thin slices, tying it with kitchen string.

Melt the remaining butter in the pan, arrange the guinea fowl, salt lightly, cover and cook gently for about two hours, turning the bird occasionally.

When cooked, remove the pork net, or the lard or bacon, restrict the sauce, pass it through a strainer.
