How to cook simple stuffed squid au gratin in the oven, recipe with aubergine, shrimp, egg, parmesan and parsley filling.


Ingredients for 4 people

- 8 medium squid already cleaned

- 1 eggplant


- 1 pound of already cleaned shrimp

- 1 tablespoon of parmesan

- 1 onion


- 1 egg

- parsley

- bread crumbs


- extra virgin olive oil

- salt and pepper

How to prepare stuffed squid au gratin in the oven

Cut the tentacles of the squid and the shrimp into small pieces.

In a pan with the extra virgin olive oil, sauté the finely chopped onion and, when it has dried, add the aubergine washed and cut into small pieces.

Add salt and pepper, then whisk until everything is puree.

Add the minced squid tentacles and shrimp to the aubergine puree.

Cook for about 5 minutes and add the chopped parsley.

Finally add the egg and grated Parmesan, then mix everything well.

With this mixture fill the squid and close them with a toothpick.


Grease a pan with the extra virgin olive oil and place the stuffed squid on top, sprinkle with salt, pepper and breadcrumbs.

Bake au gratin in the oven for about 10 minutes.

Serve the squid warm.
