How to make sweet crepes with an apple-based filling sprinkled with cinnamon, raisins and ricotta mixed with melted butter, yolks and honey.


Ingredients for 6 people

- 500 ml of milk

- 180 g of white flour "00"


- 2 eggs

- 50 g of butter

For the stuffing


- 800 g of Golden apples

How to prepare crepes with apples, cinnamon and ricotta

Melt the butter in a saucepan.

In a bowl put the flour, milk, eggs and melted butter, mix well taking care not to form lumps, then let the batter rest for 30 minutes.


After melting 1 knob of butter in a non-stick pan and pour 2-3 tablespoons of batter so that the bottom is completely covered.

When the crepe is cooked, turn it over and cook the other side.

Continue until the batter is finished.

To make the filling, soften the raisins in warm water, peel the apples and cut them into 1/2 cm high slices.

Melt 60 g of butter in a pan, add the apples sprinkled with cinnamon.

Cook the apples stirring occasionally.


In a bowl put the ricotta, 100 g of melted butter, 2 yolks and honey, mix and incorporate the apples and raisins drained from the water and squeezed.

Distribute the apple and ricotta mixture on the crepes, fold them in half so as to enclose the filling inside, and then again in half.

Place the crepes in a buttered baking dish and bake in the oven at 180 ° C for 30 minutes.

Prepare the glaze by mixing the icing sugar and apple juice.

Sprinkle the crepes with the prepared glaze and serve warm.
