How to cook tagliatelle with morels and cream, a recipe with fresh pasta with a particular flavor that requires few ingredients, which can be made in just 25 minutes in addition to the soaking time required for the morels.


Ingredients for 4 people

- 400 g of fresh tagliatelle

- 250 g of fresh morels or 25 g of dry morels


- 30 g of butter

- 250 g of cream

- 1 tablespoon of marsala


- salt

- freshly ground pepper

- juice of half a lemon


Time of realization

About 25 minutes plus 5 minutes of soaking for fresh morels or 30 minutes for dry ones.

Preparation

1) Soak the morels in fresh water for 5 minutes in the case of fresh morels, in warm water for 30 minutes in the case of dry morels.

2) Carefully and individually wash the mushrooms under running water, then cut the larger ones in half or in four parts.

3) Drain the mushrooms well on a tea towel.

4) After heating and melting the butter in a high pan, brown the morels for 10 minutes, then gradually add the cream and marsala, stewing, waiting for the cream to acquire a thick consistency.

5) Season with salt, pepper and lemon juice.

6) In abundant salted and boiling water, cook the pasta according to the instructions written on the package, so that it remains al dente.

7) Sauté the pasta in the pan together with the morels, mixing well before transferring to the preheated dishes.
