Ingredients for 4 portions

- 1 sprig of sage

- 100 g fat-free raw ham


- 1 vegetable nut

- 320 gr egg noodles

- 1 head of lettuce


- 1 spring onion

- 2 tablespoons of extra virgin olive oil

- salt and pepper


How to make tagliatelle with raw ham and lettuce

Start by peeling the spring onion, cleaning it of the stem and finely chopping it.

Heat the oil in a saucepan with the sprig of sage and the chopped ham, brown the onion on it, taking care to mix often using a wooden spoon.

Add the lettuce cut into strips and increase the intensity of the flame, then add the crumbled vegetable nut to flavor and, after 5 minutes, remove from the heat.

Pass everything in the blender, in order to obtain a homogeneous sauce, then put it back on the heat to thicken it, then add salt and pepper.

Boil the tagliatelle in abundant salted water to a boil, drain while still al dente and season with the prepared lettuce and ham sauce, then serve immediately on the table without letting it cool.
