Tartare sauce oysters to be served in shells

How to cook oysters in tartar sauce by working this delicious sauce with hard-boiled egg yolk, mustard, lemon juice and olive oil, before adding chopped onion, paprika and vinegar, an ideal condiment for prestigious shellfish.


Ingredients for 4 people

- 12 fresh oysters

- 1 boiled egg


- 1/2 teaspoon of mustard

- 2 lemons

- 1 glass of extra virgin olive oil


- 1/2 onion

- 1/2 teaspoon of paprika

- 1 teaspoon of white wine vinegar


- salt and white pepper

How to prepare oysters in tartare sauce

To make the tartar sauce put the boiled egg yolk in a bowl and work it with a fork until it becomes a smooth cream, then add the mustard, the lemon juice and the extra virgin olive oil by pouring it flush and mixing continuously mixing the sauce well, then add the chopped onion, paprika, vinegar, salt and freshly ground white pepper.

Meanwhile, on a plate, open the oysters with a knife and keep the internal liquid aside.

Filter the collected liquid, put it in a pan and bring it to a boil.

Thoroughly wash the oyster shells and arrange the deeper halves in a tray.
