- 4 celery stalks

How to prepare turkey stuffed with apples and plums

For the filling, brown the chopped celery and onion in a pan, soften them without taking color and then transfer them to a bowl.

Crumble the sausage, put it in the pan and cook it for about 10 minutes.

In the bowl where the chopped celery and onion has been transferred, add the already cooked sausage, the peeled apples without cores and cut into cubes, the chopped walnuts, the soaked plums without stones and the bread cut into cubes.


Mix everything and add the salt, thyme, sage and pepper.

Add a port glass and a ladle of broth and flavor all the ingredients.

Wash the turkey well and dry it, then fill it with the mixture obtained and tie it with kitchen string.

Take a baking sheet, grease the bottom with the butter, put the lard and the ham cut into small pieces, the rosemary and the sage.

Arrange the turkey on it and brown it over the heat evenly, then drain the fat and pour a glass of white wine.

Continue cooking in the oven at 180 ° C for about 2 and a half hours, bathing it with broth every so often.

After cooking, untie the turkey and keep it warm.

Pass the cooking bottom through a sieve and make it shrink on the fire by adding a little potato starch.

Serve the turkey with the sauce from the cooking juices.
