Ingredients for 4 portions
- 1 clove of garlic
- 5 tablespoons of extra virgin olive oil
- ground pepper
- 300 gr. of Tuscan pici
- 1 slice of laid bread
- 4 salted anchovies
Preparation of Tuscan pici with breadcrumbs
Rinse the anchovies thoroughly under cold tap water to remove all the salt, then dry and cut them into small pieces.
Peel the garlic, remove the crust from the bread and grate the crumb.
Put in a pan to heat 3 tablespoons of oil, just warm add the garlic to make it brown. Now add the anchovies, letting them brown for a minute, so that they melt slightly.Recommended readings

At this point, remove the pan from the heat and add a pinch of salt and pepper to give flavor. Grease a non-stick pan to toast the breadcrumbs, to mix with a wooden spoon for about a minute.
Put a pan with the water on the fire, to bring to a boil to cook the pasta, with the time necessary to drain it still al dente, without therefore passing the cooking.
Add 3 tablespoons of the cooking water to the anchovy sauce, which will be used to season the pasta together with the toasted breadcrumbs.
