How to make lettuce velvety, a recipe for a delicate and, at the same time, tasty and nutritious first course, with a description of the preparation process which requires a cooking time of approximately 45 minutes.

- 600 g of lettuce
- 1/2 liter of milk
- 30 g of margarine
- 2 tablespoons of flour
- 1/2 liter of nut broth
- 2 egg yolks
- 2 full spoons of grated Parmesan cheese
- 2 dl of cream

How to prepare the lettuce cream soup
Remove the outer leaves of the lettuce, then wash it and boil it in boiling water for 5 minutes, then drain it, squeeze it and chop it.
Put the chopped lettuce in a pan and flavor it in the margarine browned with the flour.
Always stirring pour the milk and, after 5 minutes of boiling, add the broth.
Continue cooking gently for half an hour and add the salt.
In a bowl, mix the egg yolks with the Parmesan cheese and the cream, pour the mixture into the cream, turn off the heat immediately and continue stirring for a few minutes.
Serve the lettuce cream with the toasted croutons.
