Preparation of whole pickled peppers
Wash and dry the peppers, then place them well separated on a towel and leave them in the sun for a whole day.
Distribute the peppers in layers in the jars, sprinkle each layer with salt, at the end pour over the vinegar previously boiled, taking care to cover everything well.
Use the care to put a weight on each container to avoid the floating of the peppers, then leave to cool and then close well.
After fifteen days drain the vinegar and cover again with fresh vinegar, this time without boiling it first, put the weight back on and close.
Allow sixty days to pass before consuming.
