Grilled aubergines with parsley and garlic

How to make grilled aubergines, with a marinade based on oil, garlic, parsley, salt and pepper, the expected cooking time is approximately 10 minutes.


Ingredients for 4 people

- 6 small aubergines

- 1 handful of chopped parsley


- 2 finely chopped garlic cloves

- 4 tablespoons of extra virgin olive oil

- salt and pepper


How to prepare grilled aubergines

Prepare the aubergines, cut them lengthwise, arrange them in a single layer on a slightly inclined surface and sprinkle them with salt.

After half an hour, shake the salt from the aubergines, rinse and dry them.

With a knife cut the surface of each slice of aubergine, so as to form a kind of grill, to facilitate cooking.


In a bowl put the oil, garlic, parsley, salt and pepper, mix and arrange the aubergines, then let them marinate for twenty minutes.

After ten minutes, turn the eggplants over so as to soak them on the other side.
