Waffles with strawberry mousse

How to make waffles with strawberry mousse, recipe to be made by mixing whipped cream and strawberry sauce, with grated lemon zest and sugar.


Ingredients for 4 people

- 400 g of strawberries

- 300 ml of fresh cream


- 100 g of sugar

- 3 gelatin sheets (4 g each)

- 1/2 lemon


For the waffles

- 50 g of white flour "00"

- 50 g of butter


- 50 g of icing sugar

- 2 egg whites

- 1 sachet of vanillin

For the strawberry sauce

- 200 g of strawberries

- 15 g of butter

- 2 spoons of sugar

Preparation of waffles with strawberry mousse

Soak the gelatin in cold water.

Wash the strawberries, remove the greens, cut them into small pieces and blend them to obtain a sauce.


Squeeze the jelly and dissolve it in a pan with 1 tablespoon of fresh cream, then mix it with the strawberry sauce.

Add the sugar, the grated lemon zest and the whipped cream, mixing from the bottom upwards.

Pour the mixture into the plumcake mold and transfer it to the refrigerator for 1 hour.

To make waffles, mix the flour, icing sugar, butter, egg whites and vanillin, then beat the mixture until creamy.

In a non-stick oven tray, place steel coppasters about 10 cm in diameter, then pour the cream inside each one.

Bake the waffles in a preheated oven at 200 ° C for 5 minutes.


When the waffles are cooked, take them out of the oven and with a spatula remove them from the pan.

With two fingers squeeze the edges of the pods on one side to form shells, then let them cool.

To prepare the sauce, the strawberries must be washed, the greens removed and cut into small pieces.

Transfer them to a pan with the butter and sugar, then cook over high heat for 2-3 minutes.

Keep the sauce warm.

Spread the waffles on the plates and in each place some balls of strawberry mousse.

Finally sprinkle the waffles with the strawberry sauce and serve them on the table.
