Asparagus pie: simple recipe with cream

- 500 gr of white asparagus

- 150 gr of parmesan


- 150 g of flour

- 3 eggs

- 70 g of butter


- half onion

- a pack of cooking cream

- extra virgin olive oil

How to prepare the asparagus pie

Knead the flour with an egg, the softened butter and salt.

Make it into a ball and put it in the refrigerator to rest.

Clean the asparagus, cut them into rounds, keeping some tips aside, then put them in a pan with onion, oil, salt, pepper, cook them.

Blanch the asparagus tips set aside for a few minutes in salted water.

Line a 20 cm cake pan with the dough and prick the dough with a fork.

Meanwhile, prepare the filling by beating the two eggs, adding the cream, grated cheese and cooked asparagus.

Mix everything and pour the filling into the cake pan lined with the pasta, then garnish with the boiled asparagus tips and bake at 180 degrees for 40 minutes.
