Aurora sauce: recipe for preparing a tomato sauce

How to prepare the aurora sauce with milk, cream and tomato, list of ingredients with detailed procedure to make this excellent sauce for seasoning any type of pasta.


Ingredients for 4 people

- 1 knob of butter

- 1 tablespoon of flour


- 150 g of milk

- 100 gr of cream

- 3 tablespoons of tomato puree


- 2 full spoons of grated Parmesan cheese

- salt

Preparation of the aurora sauce

While waiting for the pasta to reach its correct cooking point, melt the nut of butter in a saucepan over low heat, taking care not to let it color.


Then add the flour and mix continuously, cooking for 2 minutes.

Continuing to stir, on a high heat, add the milk first and then the cream, both in small doses and gradually, also pour the tomato just enough to make the sauce pinkish in color, add more milk if the mixture is too thick.

Now reduce the heat of the stove to the minimum, then salt and add the Parmesan, mixing well.
