Green pasta with frozen scallops

How to prepare green pasta with frozen scallops, a very delicate and light tasty recipe, ideal for classy dinners with relatives and friends, to be prepared in about 40 minutes including cooking time.


Ingredients for 4 people

- 400 g of green pasta

- 16 frozen scallops without shell


- 125 g of cream

- 1 sachet of saffron

- 1 shallot


- some tarragon leaves

- 1 sprig of thyme

- 1 sprig of fennel beard


- 100 ml of white wine

- 30 g of butter

- some peppercorns

- ground pepper

- 1 tablespoon of chopped parsley

Time of realization

About 40 minutes

Preparation

1) After chopping the shallot, wash the herbs and dry them well before chopping them.

2) Cook the wine for 10 minutes together with 250 ml of water, together with the shallot, herbs and spices.


3) Add the scallops to the sauce, simmer for 2 minutes, then extract and deposit them in a warm place.

4) Now sift the sauce, then pour it back into the pot, cooking it for a few more minutes.

5) Add the cream and continue cooking, waiting for the sauce to become firm and creamy, adjusting the salt and pepper.

6) Taking into account the indications written on the package about the cooking time, cook the pasta al dente, then drain it and let it drain.

7) After heating and melting the butter in a large diameter pan, sauté the pasta.

8) Once the scallops are cut, simmer for a minute in the cream sauce.


9) Pour the pasta into the prepared heated dishes, then pour over the sauce with the scallops, sprinkle parsley at the end.
