How to make a good vegetable soup

Mixed vegetable minestrone recipe, a preparation comprising beans and bacon tomato and pasta, made with pasta, onion and aromatic herbs.


Ingredients for 4 people

- 200 gr of dried borlotti beans put in water and soaked for one night (or 400/500 gr. Of fresh beans)

- 50 gr of minced bacon


- 1 liter and a half of broth

- 200 gr. about short pasta

- 1 cabbage


- 1 red onion

- 1 carrot

- 1 leek


- 1 celery rib

- a sprig of parsley

- some basil leaves

- a sprig of thyme

- 3 chopped peeled tomatoes

- Salt and Pepper To Taste.

- olive oil to taste

Preparation of vegetable minestrone

Wash the cabbage leaves and cut them into strips, then chop the onion, carrot, leek, celery rib and parsley.

Put everything in a pot, cover with water and cook for about a quarter of an hour.


Then add the beans previously soaked, the chopped bacon, the chopped basil leaves, the thyme, the chopped tomatoes, the broth, salt and pepper.

Boil everything for an hour abundant (the beans must cook), then add the pasta and cook it. Serve with a drizzle of olive oil on each plate.
