Pork fillet with tomato and mozzarella with anchovies

Ingredients for 4 portions

- 4 slices of mozzarella

- 4 slices of tomato


- 2 anchovy fillets in oil

- 4 slices of pork tenderloin weighing 120 g each

- 1 tablespoon of olive oil

How to make pork fillet with tomato sauce

Pass the pork slices with the meat tenderizer until the thickness is reduced to about half a centimeter.

Heat the oil in a generously sized pan and lay the slices of meat on it, cooking for three minutes on each side, until they take on color, then add salt.

Now reduce the heat and place on each slice of meat, a slice of mozzarella and a tomato, half an anchovy fillet, then cook in a covered pan and with moderate heat for a further 7 minutes.
