Potato gnocchi dough: simple sauce and cheese recipe

Homemade potato gnocchi recipe, to be boiled in salted water and seasoned with layers of parmesan and tomato or meat sauce of your choice.


Ingredients for 4 people

- 1 Kg. Of potatoes

- 250 gr. made with flour


- 2 egg yolks

- salt

How to make potato dumplings

Boil the potatoes without peeling them.


As soon as they are cooked, peel them, pass them to the passatutto and mix them together with the flour, the egg yolks and a pinch of salt.

Knead the dough well and make small loaves a finger and cut them into 2 or 3 cm long dumplings.

Cook them in abundant salted water for about two minutes (they are cooked when they rise to the surface).

Remove them a few at a time with a slotted spoon, drain them, arrange them in a bowl and season them in layers with cheese and tomato or meat sauce.
